Your doctor can run blood work but because s/he is under the insurance model, they may overlook key markers of health. Other specialized tests such as stool, mold, urinary hormones, heavy metals etc. require specialty labs so unless your doctor has an independent contract with these labs, they are not able to run these tests.

A good intake can tell us a lot and it may allow us to begin a treatment plan, but testing is what dictates the course of your care. Lab markers are objective and allow us to see what is going on below the surface and to monitor your progress over time.
